SUMMER SIZZLES
It's hot, hot, hot and with the Summer sun beating on our backs it's nice to take a refreshing break in the shade. The Caloosa team has been in the kitchen and came up with a great way to keep cool…nothing says Summer like a popsicle, the quintessential summertime favorite. Here is the recipe we would like to share with you:
Watermelon, Strawberry Mojito Popsicles
3 cups cubed seedless watermelon
1 cup sliced fresh strawberries
1/4 cup lime juice
1/4 cup sugar
1/4 cup white rum (omit if serving children)
Chopped mint leaves
Grated lime zest
Place chopped mint leaves and lime zest on
small sheet pan or dish and place in freezer.
(Freezing mint and lime zest will keep it from sinking while
popsicles are freezing)
Purée watermelon and strawberries in food processor.
Mix lime juice and sugar in saucepan on medium heat,
stir until sugar is completely dissolved. Cool to room temperature, then
add to watermelon/strawberry mixture.
Add rum.
Pour ingredients into popsicle mold and place in freezer
for 1/2 hour. After a 1/2 hour, remove mold and add frozen chopped mint leaves
and frozen grated lime zest to the top of each popsicle. Use a bamboo skewer to push mint and lime throughout, they will stay suspended.
Insert popsicle sticks and return mold to freezer for 8 hours.
Perfectly cool for the hot weather…Enjoy!
